{18 years ago}

We walked down the aisle and made a vow...
for better for worse,
for richer for poorer,
to be faithful in sickness and health,
to love and to cherish,
'til death to us part...
We walked out of the sanctuary to the Wabash Cannon Ball as proud K-Staters for their team who won their Bowl Game the night before. 
We were young with big big dreams...
 I hope we never quit dreaming together!

{Better than a Christmas puzzle...}

{Apples, Oh My...}

My friend, Heidi, had her mom bring me a box of apples from PA when they came to visit a few weeks ago. It has sat in my kitchen and been waiting for a day that I could create some yummy things for the freezer from them.
Today was the day...
Apple Pie filling, yummy applesauce and several bags of finely chopped apples to put in the freezer to add to muffins and pancakes.
We also have several pumpkins still sitting in the dining room from our garden so while the apples cooked, I also put a couple of pumpkins in the oven to bake...
I use the pumpkin in muffins and pancakes as well as adding it to spaghetti sauce, soup base for chicken noodles, chili and taco soup.
Lots of yummy goodness!

I wish I would have taken a picture of my pink 5 gallon bucket, it was filled with skin and cores to send out to the compost pile, the kids were impressed with it!
 Here are the apple recipes, I modified them a little (mainly less sugar.)

Then  I packaged everything in freezer bags in the amounts that I use for baking or eat and froze them to enjoy another day!

{Gingerbread Traditions}

A few days before Christmas, we spent the morning making gingerbread houses.
Before we began building, we watched a challenge on the food channel (watched on Amazon instant video) of a challenge between two teams trying to build 6 foot tall gingerbread houses. 
Then we went to work in our own two teams...
 The bowls of candy seemed to disappear while we were still building:)

{God's Timing-vs- my timing...}

I watched the weather most of the day, reports said a big winter storm was on it's way.
That wasn't what I wanted in my schedule so I was trying to scurry around and get a lot of things done so we could get on the road to head to a wedding in the city. As the afternoon went on, we decided that maybe we should head to the city tonight ahead of the ice and spend the night instead of making the trip in a winter storm in the morning.

I was trying to pack for all the kids, making sure I had all the gifts for the cousins because we are having Christmas with them after the wedding and hoping to get the car packed so we could leave as soon as the girls got out of gymnastics. Grand plans but not very realistic...

The girls got home at 8:40pm and I was still packing. We finally got on the road about 10:15, knowing it was going to be a long trip and a late night. Because of schedules, we needed to take 2 cars so I took the lead. As we drove, the kids fell asleep, and I listened to Christmas music on the radio, pondering the evening...

I had gotten frustrated at the kids because they were rowdy while I was trying to pack...
Upset that I had left things a bit of a wreck trying to get on the road...
A little mad at myself that I didn't pack quicker to get us on the road sooner...
and sad that my focus was on a list I needed to complete instead of what we were preparing for...
a celebration of Christmas, the birth of the Savior with family and friends in the next few days.

About 12:35am, I came over a hill on the highway and saw ahead lots of emergency flashing lights... police cars, an ambulance, etc. I slowed down to get by and noticed  a large cow that had been hit but with all the lights and emergency vehicles, I didn't notice the vehicle that had hit the cow. After I got by my cell phone rang and it was my husband who was following me. He said, "That was our neighbor, he had gone to the city to pick someone up at the airport." We pulled over and he made a quick call, then we went back to the accident. Indeed, it was friends and thankfully they were not hurt badly. The car was in bad shape and they were trying to figure out how to get back home, 2+ hours away from the place we were at. We were able to help out and made a quickly plan to get everyone on the road.

After we were back on the road, one of the kids said, "Mom, it was good that Daddy saw who it was at the accident and that he was willing to stop and help them." How right my little man was, it was good that we could stop and help and it was a little reminder that my heart needed... 
God's timing is always perfect... He knew exactly what time we needed to be on the road where and He put us there!

"My thoughts are not your thoughts, my ways are not your ways," said The Lord. "For the heavens are higher than the earth, so are my ways higher than your ways and My thought than your thoughts." Isaiah 55:8-9

{A Night in Bethlehem}

Sunday morning we celebrated "A Night in Bethlehem" during the worship service.
Each of the kids enjoyed being a part...

 Eli was the Innkeeper with one of the most famous lines of the Christmas Story,
"because there was no room for them in the inn..."
 Lenna was the narrator for the shepherds...
Abigayl proclaimed the good news...
 and Nate brought treasures to worship the new born King!
A rather fitting role for our little man...
We sang and rejoiced of our Savior's birth!
 Merry Christmas!

{Not so} Wordless Wednesday... A December catch up!

This post is a lot of random pictures, but one that I want to remember in our scrapbooks.

December's weather has been bouncing back and forth...
Days when the high was 18 and the low was 3 and I didn't even look to see what the wind chill was...
to 60 degrees the other day!
A perfect day for "Boat School!"
 I love Christmas books, so we have spent a lot of time reading together this month.
One of our favorites is Annika's Secret Wish by Beverly Lewis.
It is a beautiful story of a Swedish girl who dreams about what her wish would be if she gets the almond in the Rice Pudding on Christmas Eve.
 We made rice pudding and hid an almond...
 Eli got the almond...
 We celebrated with a bridal shower this month,
and Saturday we will attended this beautiful young bride's wedding.
It was beautiful, fun afternoon of celebration.
We've had a lot of smiles this month...
 and a yucky bug that came to visit this poor girl's tummy.
 We attended the Prairie Nutcracker at this beautiful theatre with 20 other family and friends.
It was well done and a beautiful afternoon.
 We have been baking a lot!
 and eating a lot of yummy Christmas treats!
 We've reading so many great Christmas stories together (someone slept through a few when she wasn't feeling well...)
 Lenna added head gear to her wardrobe this month.

It has been a busy month and we are looking forward to celebrating Jesus' Birth!
